- 1 lb boneless, skinless chicken breasts
- 8 oz fettuccine pasta
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 bell pepper (any color), sliced
- 1 cup onion, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.
- While the pasta cooks, season the chicken breasts with Cajun seasoning, salt, and pepper.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken to the skillet and cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and let it rest for a few minutes, then slice it into strips.
- In the same skillet, add the sliced bell peppers, onion, and garlic. Sauté for about 5 minutes until the vegetables are tender.
- Reduce the heat to medium and pour in the heavy cream. Stir in the Parmesan cheese, mixing until the sauce thickens slightly.
- Add the cooked fettuccine and sliced chicken back into the skillet. Toss everything together to coat in the creamy sauce.
- Taste and adjust the seasoning with more salt, pepper, or Cajun seasoning if desired.
- Remove from heat and garnish with freshly chopped parsley.
