- 1 large Onion (diced)
- 2 medium Carrots (chopped)
- 2 stalks Celery (diced)
- 1 teaspoon Kosher salt
- 1 teaspoon Black pepper
- 3 cloves Garlic (minced)
- 1 teaspoon Dried thyme
- 1 teaspoon Dried oregano
- 1 teaspoon Ground cumin
- 1 teaspoon Paprika
- 1/2 teaspoon Ground coriander
- 1 head Green cabbage (chopped)
- 1 28-ounce can Fire-roasted tomatoes
- 1 small Zucchini (halved and sliced)
- 4 cups Chicken or vegetable broth
- 2 tablespoons Red or white wine vinegar
- 1/4 cup Chopped fresh parsley
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Sauté diced onion, chopped carrots, and diced celery with kosher salt and black pepper until softened, about 5 minutes.
- Add minced garlic, dried thyme, dried oregano, ground cumin, paprika, and ground coriander. Cook for an additional minute until fragrant.
- Stir in the chopped cabbage, cover, and cook for 3 minutes.
- Combine fire-roasted tomatoes, sliced zucchini, and broth. Adjust seasoning with extra salt and pepper to taste.
- Bring the mixture to a boil; then reduce heat and simmer uncovered for 20-25 minutes.
- Stir in red or white wine vinegar, then taste and adjust seasoning before serving hot, garnished with fresh parsley.
