Description

Buffalo chicken quesadillas combine spicy, tangy Buffalo sauce with tender chicken and melted cheese in a crispy tortilla for a perfect appetizer or snack.


Ingredients

  • 4 cups shredded rotisserie chicken
  • 3/4 cup Frank’s RedHot sauce
  • 3 tablespoons ranch dressing
  • 1/2 cup sliced green onions
  • 1/4 teaspoon dried coriander
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 4 10-inch flour tortillas
  • 2 cups shredded mozzarella cheese
  • Cilantro for garnish

Instructions

  1. In a mixing bowl, combine the shredded chicken, hot sauce, ranch dressing, green onions, coriander, garlic powder, salt, and pepper.
  2. Heat a skillet over medium heat and melt the butter to coat the pan.
  3. Place one tortilla in the skillet and sprinkle it with cheese.
  4. Add the buffalo chicken filling, followed by another layer of cheese.
  5. Once the bottom of the tortilla is golden brown, fold it in half and press lightly to secure it.
  6. Continue cooking until the cheese is fully melted and the tortilla is crispy.
  7. Remove from the skillet and repeat with the remaining tortillas and filling.
  8. Cut the quesadillas into halves or thirds and garnish with cilantro.
  9. Serve hot with your favorite dips.

Notes

  • For a spicier quesadilla, add more hot sauce.
  • For a milder version, reduce the hot sauce.
  • Consider adding diced celery or carrots for extra crunch.
