  • 1 cup Dry Red Wine
  • 1 large Onion (diced)
  • 1 cup Bell Peppers (orange, red, green)
  • 1 small Red Onion (diced)
  • 3 cloves Garlic (diced)
  • 1 tbsp Fresh Thyme
  • 12 slices Baguette (½-inch thick)
  • 2 tbsp Extra-virgin Olive Oil
  • 1 large Onion (for caramelizing)
  • ½ cup Blue Cheese Butter
  • ¼ cup Chives (chopped for garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Season beef generously with salt, pepper, paprika, and oregano.
  3. Heat olive oil in a Dutch oven over medium heat and brown the beef on all sides.
  4. Sauté garlic, diced bell peppers, onions, and thyme in the same pot until softened.
  5. Return beef to the pot, deglaze with red wine, and bring to a boil.
  6. Add beef broth, reduce heat to low, cover, and braise in the oven for 2.5 to 3 hours until tender.
  7. While beef braises, caramelize sliced onions in a separate saucepan.
  8. Arrange baguette slices on a baking tray, drizzle with olive oil, and toast until golden.
  9. Spread blue cheese butter on the toasted baguette slices and broil briefly until bubbly.
  10. Shred the braised beef and place a portion on each crostini.
  11. Top with caramelized onions and chopped chives.
