Ingredients

- 2 teaspoons Active Dry or Instant Yeast

Instructions
- Warm the milk gently, then mix in the sugar and yeast. Let sit for 5-10 minutes until frothy.
- In a large bowl, whisk together the activated yeast mixture with eggs and vanilla extract.
- Gradually add all-purpose flour, salt, and softened butter. Mix until a soft dough forms.
- Perform the windowpane test. Cover the bowl and refrigerate overnight.
- Sauté diced apples with lemon juice, dark brown sugar, and spices until tender. Let the filling cool completely.
- Roll the chilled dough to about ½ inch thick on a floured surface.
- Place spoonfuls of the cooled apple filling on the dough, fold over, and cut into fritter shapes.
- Allow fritters to proof for about 30 minutes.
- Heat neutral oil in a deep fryer or heavy pot to 355°F (180°C).
- Gently drop in the fritters, frying until golden brown on both sides, about 2-3 minutes per side. Drain on paper towels.
- Whisk together bourbon, powdered sugar, and a splash of milk until smooth for the glaze.
