Zesty Blackened Shrimp Avocado Cucumber Bites are a flavorful appetizer featuring seasoned shrimp, crisp cucumber, and creamy avocado sauce.


Ingredients

  • 2 tablespoons Oil
  • 1 tablespoon Creole Seasoning
  • 1 pound Medium (2025 count) shrimp, peeled and deveined
  • 1 medium English Cucumber, sliced into rounds
  • 1 medium Avocado, mashed
  • 2 tablespoons Green Onion and Herbs (Cilantro/Parsley)
  • 1 tablespoon Lemon Juice
  • Salt to taste
  • Cayenne pepper to taste
  • 1 tablespoon Remoulade Sauce (optional)

Instructions

  1. Toss the peeled and deveined shrimp in oil and creole seasoning until well coated.
  2. Heat a heavy pan over medium-high heat and cook the shrimp for about 2-3 minutes per side until slightly blackened and tender.
  3. In a mixing bowl, mash the avocado and add green onions, fresh herbs, lemon juice, salt, and a pinch of cayenne. Mix until smooth and creamy, adjusting seasoning to your taste.
  4. Take chilled cucumber rounds and spread a generous layer of avocado sauce on each.
  5. Top with the blackened shrimp and, if desired, drizzle with remoulade sauce.
  6. Serve immediately.

Notes

  • Garnish with additional fresh herbs for a pop of color.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days. Keep the avocado sauce separate to maintain the cucumber’s crispness.
