This Black Pepper Chicken with Mushrooms is a bold, peppery dish that’s full of savory flavors and minimal effort. Succulent chicken pieces are stir-fried with hearty mushrooms, coated in a sticky, fragrant black pepper sauce, and finished with a glossy, flavorful glaze.
Ingredients
- 500g boneless chicken thighs or breasts, diced
- 200g mushrooms, halved or thickly sliced (button or cremini)
- 1 tbsp coarse black pepper (adjust to taste)
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp hoisin sauce (optional for sweetness)
- 1 tbsp cornstarch
- 2 tsp dark soy sauce
- 2 tsp sesame oil
- 1 red chili, finely chopped (optional for heat)
- 1 tbsp minced garlic
- 1 tsp minced ginger
- 2 tbsp vegetable oil
- Salt to taste
- Chopped scallions or cilantro for garnish
Instructions
- Marinate the Chicken: In a bowl, combine diced chicken with 1 tbsp soy sauce, 1 tsp sesame oil, 1 tbsp cornstarch, and a pinch of salt. Let it marinate for 15 minutes.
- Make the Sauce: In another bowl, mix the remaining soy sauce, oyster sauce, hoisin sauce (if using), dark soy sauce, and black pepper.
- Cook the Chicken: Heat 1 tbsp of vegetable oil in a pan over medium-high heat. Add the marinated chicken and sear for about 5–7 minutes until golden and cooked through. Remove from the pan and set aside.
- Cook the Aromatics and Mushrooms: In the same pan, heat the remaining oil. Sauté minced garlic, ginger, and chopped chili for 30 seconds. Add the mushrooms and stir-fry for 4–5 minutes, until tender and the moisture is released.
- Combine and Simmer: Return the chicken to the pan. Pour in the sauce and stir-fry until the sauce thickens and evenly coats the chicken and mushrooms, about 2–3 minutes.
- Finish and Serve: Drizzle with sesame oil and garnish with chopped scallions or cilantro. Serve hot with rice, noodles, or stir-fried vegetables.
