- 2 pounds beef stew meat, cut into 1-inch cubes
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 cups diced tomatoes (fresh or canned)
- 1 cup beef broth
- 1 cup orzo pasta
- 1 tablespoon olive oil
- 2 teaspoons dried oregano
- 1 teaspoon ground cinnamon
- ½ teaspoon ground black pepper
- 1 teaspoon salt (or to taste)
- 1 bay leaf
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional, for serving)
Instructions
- In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and sear them on all sides until golden brown. This should take about 5-7 minutes. Remove the beef and set it aside.
- In the same pot, add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
- Return the seared beef to the pot. Add the diced tomatoes and beef broth, scraping the bottom of the pot to release any browned bits.
- Stir in the oregano, cinnamon, black pepper, salt, and bay leaf. Bring the mixture to a gentle boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for approximately 1 hour. Stir occasionally to prevent sticking and ensure even cooking.
- After simmering the beef, add the orzo pasta and stir well. Cook uncovered for another 15-20 minutes, or until the orzo is tender and has absorbed most of the liquid.
- Once the orzo is cooked, remove the pot from heat. Let it rest for about 10 minutes. This resting period allows the flavors to meld further.
- Before serving, remove the bay leaf from the pot.
- Serve the dish garnished with chopped fresh parsley and a sprinkle of grated Parmesan cheese if desired.
