  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups diced tomatoes (fresh or canned)
  • 1 cup beef broth
  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground black pepper
  • 1 teaspoon salt (or to taste)
  • 1 bay leaf
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and sear them on all sides until golden brown. This should take about 5-7 minutes. Remove the beef and set it aside.
  2. In the same pot, add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
  3. Return the seared beef to the pot. Add the diced tomatoes and beef broth, scraping the bottom of the pot to release any browned bits.
  4. Stir in the oregano, cinnamon, black pepper, salt, and bay leaf. Bring the mixture to a gentle boil.
  5. Once boiling, reduce the heat to low, cover the pot, and let it simmer for approximately 1 hour. Stir occasionally to prevent sticking and ensure even cooking.
  6. After simmering the beef, add the orzo pasta and stir well. Cook uncovered for another 15-20 minutes, or until the orzo is tender and has absorbed most of the liquid.
  7. Once the orzo is cooked, remove the pot from heat. Let it rest for about 10 minutes. This resting period allows the flavors to meld further.
  8. Before serving, remove the bay leaf from the pot.
  9. Serve the dish garnished with chopped fresh parsley and a sprinkle of grated Parmesan cheese if desired.
