  • 1 lb (450g) large raw prawns, peeled and deveined
  • 4 cloves garlic, minced
  • 1 medium lemon (juice and zest)
  • 12 fresh red chillies, chopped (adjust according to heat preference)
  • 3 tablespoons olive oil
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a mixing bowl, combine the minced garlic, lemon juice, lemon zest, chopped chillies, olive oil, salt, and black pepper.
  2. Add the prawns to the marinade, ensuring they are evenly coated. Let them marinate for 10-15 minutes for maximum flavor penetration.
  3. While the prawns are marinating, preheat your grill to medium-high heat.
  4. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread prawn onto skewers, if desired for easier handling.
  5. Place the marinated prawns directly onto the grill rack or on skewers. Grill for about 2-3 minutes on each side until they are opaque and slightly charred.
  6. Ensure the prawns are cooked through but not overcooked, as they can become tough.
  7. Once cooked, remove the prawns from the grill. Garnish them with freshly chopped parsley.
