- 1 lb (450g) large raw prawns, peeled and deveined
- 4 cloves garlic, minced
- 1 medium lemon (juice and zest)
- 1–2 fresh red chillies, chopped (adjust according to heat preference)
- 3 tablespoons olive oil
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- In a mixing bowl, combine the minced garlic, lemon juice, lemon zest, chopped chillies, olive oil, salt, and black pepper.
- Add the prawns to the marinade, ensuring they are evenly coated. Let them marinate for 10-15 minutes for maximum flavor penetration.
- While the prawns are marinating, preheat your grill to medium-high heat.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread prawn onto skewers, if desired for easier handling.
- Place the marinated prawns directly onto the grill rack or on skewers. Grill for about 2-3 minutes on each side until they are opaque and slightly charred.
- Ensure the prawns are cooked through but not overcooked, as they can become tough.
- Once cooked, remove the prawns from the grill. Garnish them with freshly chopped parsley.
- Plate the prawns and serve immediately with lemon wedges on the side for an extra burst of flavor.
