Ingredients

  • 1 lb ground turkey
  • 1 cup chopped red bell pepper
  • 1 cup chopped carrots
  • 1 cup chopped broccoli
  • Salt
  • Pepper
  • 2 cups cooked jasmine rice
  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 2 pieces green onions
  • 1 tablespoon sesame seeds

Instructions

  1. Cook the rice according to package instructions.
  2. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha sauce, and lime juice. Set aside.
  3. Heat a large skillet over medium-high heat and drizzle in olive oil.
  4. Add ground turkey to the skillet and break it apart as it cooks. Sauté until browned and fully cooked, about 5-7 minutes.
  5. Sprinkle in soy sauce, salt, and pepper. Stir to season the turkey.
  6. Toss in chopped red bell pepper, carrots, and broccoli. Cook for an additional 5-7 minutes until veggies are tender-crisp.
  7. Remove from heat and fold in half of the bang bang sauce.
  8. In serving bowls, create a mound of cooked jasmine rice.
  9. Spoon the turkey and vegetable blend over the rice.
  10. Drizzle remaining bang bang sauce over each bowl.
  11. Sprinkle sliced green onions and sesame seeds on top. Serve immediately.
