- 1 lb ground turkey
- 1 cup chopped red bell pepper
- 1 cup chopped carrots
- 1 cup chopped broccoli
- Salt
- Pepper
- 2 cups cooked jasmine rice
- 1 tablespoon olive oil
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha sauce
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 2 pieces green onions
- 1 tablespoon sesame seeds
Instructions
- Cook the rice according to package instructions.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha sauce, and lime juice. Set aside.
- Heat a large skillet over medium-high heat and drizzle in olive oil.
- Add ground turkey to the skillet and break it apart as it cooks. Sauté until browned and fully cooked, about 5-7 minutes.
- Sprinkle in soy sauce, salt, and pepper. Stir to season the turkey.
- Toss in chopped red bell pepper, carrots, and broccoli. Cook for an additional 5-7 minutes until veggies are tender-crisp.
- Remove from heat and fold in half of the bang bang sauce.
- In serving bowls, create a mound of cooked jasmine rice.
- Spoon the turkey and vegetable blend over the rice.
- Drizzle remaining bang bang sauce over each bowl.
- Sprinkle sliced green onions and sesame seeds on top. Serve immediately.
