  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas, carrots)
  • Green onions for garnish (optional)
  • Sesame seeds for garnish (optional)
  • 1/2 cup mayonnaise (can use light mayo)
  • 23 tablespoons sriracha sauce (adjust to your heat preference)
  • 2 tablespoons honey (or brown sugar)
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon salt

Instructions

  1. Begin by cooking the rice according to package instructions.
  2. While the rice is cooking, prepare your signature bang bang sauce by mixing mayonnaise, sriracha, honey, garlic powder, lime juice, and salt until smooth. Set aside.
  3. Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
  4. Heat olive oil in a large skillet over medium heat and cook the chicken until golden brown and cooked through, about 6-8 minutes.
  5. Add mixed vegetables to the skillet and cook for another 3-4 minutes until they are tender-crisp.
  6. Reduce heat to low and add the prepared bang bang sauce to the skillet, stirring to coat the chicken and vegetables evenly.
