- 2 tablespoons olive oil
- Salt and pepper to taste

- Green onions for garnish (optional)
- Sesame seeds for garnish (optional)
- 1/2 cup mayonnaise (can use light mayo)
- 2–3 tablespoons sriracha sauce (adjust to your heat preference)
- 2 tablespoons honey (or brown sugar)
- 1 teaspoon garlic powder
- 1 tablespoon fresh lime juice
- 1/4 teaspoon salt
Instructions
- Begin by cooking the rice according to package instructions.
- While the rice is cooking, prepare your signature bang bang sauce by mixing mayonnaise, sriracha, honey, garlic powder, lime juice, and salt until smooth. Set aside.
- Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
- Heat olive oil in a large skillet over medium heat and cook the chicken until golden brown and cooked through, about 6-8 minutes.
- Add mixed vegetables to the skillet and cook for another 3-4 minutes until they are tender-crisp.
- Reduce heat to low and add the prepared bang bang sauce to the skillet, stirring to coat the chicken and vegetables evenly.
- Divide the cooked rice among serving bowls, top with the bang bang chicken and vegetable mixture, and garnish with green onions and sesame seeds if desired.
Notes
- Store leftovers in an airtight container for up to 3 days; keep the sauce separate if possible.
- For best texture, add fresh garnishes after reheating.
