  • 1 cup Plain/All-Purpose Flour (Gluten-free flour can be used)

  • 1/2 tsp Salt
  • 1/4 tsp Ground Nutmeg (Cinnamon can be a substitute)
  • 1 large Egg (A flax egg works as a vegan option)
  • 3/4 cup Caster/Granulated Sugar (Brown sugar adds depth)
  • 1/2 cup Buttermilk (Can substitute with milk and vinegar)
  • 1/4 cup Vegetable Oil (Melted butter is a great alternative)
  • 1 tsp Vanilla Extract (Pure extract enhances flavor)
  • 1/4 cup Warm Milk (Any milk type works)
  • 2 tbsp Instant Coffee Granules (Avoid brewed coffee)
  • 1/2 tsp Vanilla Extract
  • 1 cup Icing/Powdered Sugar (Adjust for thickness)

Instructions

  1. Preheat your oven to 200°C (400°F) and grease a doughnut pan.
  2. Dissolve the instant coffee granules in hot water and set aside.
  3. Whisk together the flour, baking powder, salt, and nutmeg in a bowl.
  4. Mix the eggs and sugar in a separate bowl until combined. Add the buttermilk, vegetable oil, vanilla extract, and dissolved coffee.
  5. Combine the dry ingredients with the wet ingredients; mix just until combined.
  6. Spoon the batter into the prepared doughnut pan, filling each mold almost to the top. Bake for 8-10 minutes.
  7. Cool the doughnuts for 5-10 minutes in the pan before transferring them to a wire rack.
  8. For the Glaze: Combine the instant coffee and vanilla extract in warm milk, then whisk in the icing sugar until smooth.
  9. Dip the cooled doughnuts in the glaze and let them set on the wire rack.
