Delicious Babka Scones with Irresistible Chocolate Filling


Ingredients

Scale
  • 325 g all purpose flour
  • 2 teaspoons baking powder
  • ¾ teaspoon fine sea salt
  • 50 g fine granulated sugar
  • 113 g unsalted butter, cold and sliced
  • 2 teaspoons pure vanilla extract
  • 120 g heavy cream, cold
  • 1 large egg
  • 30 g powdered sugar
  • 57 g unsalted butter
  • 20 g dutch process cocoa
  • 150 g chopped dark chocolate
  • ¼ cup finely chopped hazelnuts (optional)

Instructions

  1. Melt the butter and chopped chocolate for the filling in a small pot over medium-low heat. Once melted, sift in the cocoa and powdered sugar. Whisk to combine until smooth and pour into a bowl to cool.
  2. In a mixing bowl, whisk together the flour, baking powder, salt, and sugar for the scone dough.
  3. Add the cold butter to the flour mixture and use a pastry cutter to combine until the butter resembles kidney beans.
  4. In a separate bowl, whisk together the heavy cream, egg, and vanilla. Pour this mixture into the flour and butter mixture and stir using a spatula until just combined.
  5. Use your hands to squeeze and fold the dough over itself until it mostly comes together into a ball.
  6. Roll the dough out to about 20×12 inches, then spread the cooled chocolate ganache over it.
  7. Roll the dough into a log and place it on a parchment-lined cookie sheet. Freeze for about 1-2 hours until it’s mostly firm but not completely frozen.
  8. Once firm, remove from the freezer and slice into V-shaped scones. Place them on a parchment-lined baking sheet with space in between.
  9. Preheat the oven to 400°F. Brush the tops of the scones with heavy cream and sprinkle granulated sugar on top.
  10. Bake for about 20 minutes until the tops and edges are golden brown.
