Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 teaspoon white vinegar
  • 1 teaspoon cornstarch
  • 1 cup heavy cream
  • 3 tablespoons maple syrup
  • 2 medium apples (such as Granny Smith or Honeycrisp), peeled and thinly sliced
  • ½ cup salted caramel sauce (store-bought or homemade)
  • Optional: cinnamon for dusting

Instructions

  1. Preheat your oven to 225°F (110°C). Line a baking sheet with parchment paper.
  2. In a clean, dry bowl, beat the egg whites on medium speed until soft peaks form.
  3. Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat. Increase the speed to high and beat until stiff peaks form and the mixture is glossy.
  4. Gently fold in the white vinegar and cornstarch using a spatula until combined.
  5. Spoon the meringue onto the prepared baking sheet, creating a circle about 8-10 inches in diameter. Use the back of a spoon to create a slight well in the center for the toppings.
  6. Place the meringue in the preheated oven and bake for 1 hour. Turn off the oven and leave the meringue inside to cool completely, preferably for at least 1 hour.
  7. In a mixing bowl, beat the heavy cream until soft peaks form. Gradually add maple syrup and continue to beat until stiff peaks form.
  8. While the meringue cools, prepare the apples. Toss the thinly sliced apples with a sprinkle of cinnamon for added flavor.
  9. Once the meringue has cooled, carefully transfer it to a serving platter. Spoon the maple cream into the center of the meringue.
  10. Arrange the sliced apples on top of the maple cream.
  11. Generously drizzle the salted caramel sauce over the apples and cream.
  12. If desired, dust with a little extra cinnamon before serving.
