Description
Authentic Shandong Roast Chicken is a flavorful dish that showcases traditional Chinese cooking techniques.
Ingredients
Scale
- 1 whole chicken (about 3–4 lbs)
- 4 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon ginger (grated)
- 1 tablespoon garlic (minced)
- 2 tablespoons scallions (chopped, plus extra for garnish)
- 1 teaspoon five-spice powder
- Salt and pepper (to taste)
- 1 tablespoon honey (optional, for glazing)
Instructions
- Rinse the chicken under cold water and pat it dry with paper towels.
- In a bowl, combine soy sauce, sesame oil, rice vinegar, ginger, garlic, scallions, five-spice powder, salt, and pepper. Mix well.
- Rub the marinade all over the chicken, ensuring it penetrates into the cavity. Let the chicken marinate for at least 1 hour or overnight in the refrigerator for the best flavor.
- Preheat your oven to 375°F (190°C).
- Transfer the marinated chicken to a roasting pan, breasts facing up. Optionally, apply honey over the skin for a glossy finish.
- Roast for 55–60 minutes, basting every 15 minutes with the drippings, until the skin is golden brown and juices run clear when pierced at the joint.
- Once cooked, remove the chicken from the oven and let it rest for 15-20 minutes. This ensures the juices redistribute within the meat.
