  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon ginger (grated)
  • 1 tablespoon garlic (minced)
  • 2 tablespoons scallions (chopped, plus extra for garnish)
  • 1 teaspoon five-spice powder
  • Salt and pepper (to taste)
  • 1 tablespoon honey (optional, for glazing)

Instructions

  1. Rinse the chicken under cold water and pat it dry with paper towels.
  2. In a bowl, combine soy sauce, sesame oil, rice vinegar, ginger, garlic, scallions, five-spice powder, salt, and pepper. Mix well.
  3. Rub the marinade all over the chicken, ensuring it penetrates into the cavity. Let the chicken marinate for at least 1 hour or overnight in the refrigerator for the best flavor.
  4. Preheat your oven to 375°F (190°C).
  5. Transfer the marinated chicken to a roasting pan, breasts facing up. Optionally, apply honey over the skin for a glossy finish.
  6. Roast for 55–60 minutes, basting every 15 minutes with the drippings, until the skin is golden brown and juices run clear when pierced at the joint.
