Ingredients

- 1 head Boston Bibb lettuce or romaine/butter lettuce
- 1 cup steamed white rice or cauliflower rice (optional)
Instructions
- Prepare the sauce: In a measuring cup, combine maple syrup, coconut aminos, rice vinegar, sesame oil, and red pepper flakes. Whisk until combined. If using, add arrowroot powder.
- Cook the beef: Heat olive oil in a skillet over medium-high heat. Add ground beef and cook, breaking it apart, until no longer pink, about 5 minutes.
- Add aromatics: Stir in minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.
- Sauté vegetables: Add red bell pepper and shredded carrots to the skillet. Cook for 3-4 minutes until tender-crisp.
- Combine and simmer: Pour the prepared sauce over the beef and vegetable mixture. Stir well and simmer for 2-3 minutes until the sauce thickens.
- Add green onions: Stir in the sliced green onions just before serving.
- Serve: Spoon the Asian ground beef filling into lettuce wraps. Garnish with sesame seeds if desired. Serve with steamed rice or cauliflower rice for a complete meal.
