  • 2 tablespoons Lime Juice
  • 1 tablespoon Sugar (for potatoes)
  • 2 cloves Chopped Garlic (for potatoes)
  • 1/4 cup Cilantro (fresh garnish)
  • 1 medium Chopped Fresh Red Chili (adjust heat to taste)

Instructions

  1. Rinse the beef short ribs under cold water to remove any impurities.
  2. Marinate the short ribs in a mixing bowl with brown sugar, sesame oil, soy sauce, grated onion, minced garlic, salt, and pepper for 6 to 24 hours in the refrigerator.
  3. Preheat your oven to 300°F (149°C).
  4. Place the marinated ribs bone side down in a roasting pan. Add 1.5 cups of water and the remaining marinade, then cover the pan tightly with foil.
  5. Roast the Asian braised short ribs for about 3 hours.
  6. Remove the foil and continue roasting for an additional 15 minutes, allowing the top to develop a delicious crust.
  7. Prepare the potatoes by placing them on a parchment-lined baking sheet. Drizzle generously with olive oil and season with salt and pepper.
  8. Roast the potatoes in the oven alongside the ribs for the last 45 minutes, until golden and crispy.
  9. Make the potato dressing by whisking together olive oil, lime juice, sugar, minced garlic, cilantro, and red chili. Season to taste.
