- 1/4 cup Brown Sugar
- 2 tablespoons Sesame Oil
- 1/2 cup Soy Sauce (low-sodium recommended)
- 1 medium Onion (Grated, shallots can be used)
- 4 cloves Garlic (Minced, fresh is best)
- Salt & Black Pepper (to taste)
- 2 lbs Yukon Gold Potatoes (waxy potatoes work well)
- 3 tablespoons Olive Oil (for roasting)
- 2 tablespoons Lime Juice
- 1 tablespoon Sugar (for potatoes)
- 2 cloves Chopped Garlic (for potatoes)
- 1/4 cup Cilantro (fresh garnish)
- 1 medium Chopped Fresh Red Chili (adjust heat to taste)
Instructions
- Rinse the beef short ribs under cold water to remove any impurities.
- Marinate the short ribs in a mixing bowl with brown sugar, sesame oil, soy sauce, grated onion, minced garlic, salt, and pepper for 6 to 24 hours in the refrigerator.
- Preheat your oven to 300°F (149°C).
- Place the marinated ribs bone side down in a roasting pan. Add 1.5 cups of water and the remaining marinade, then cover the pan tightly with foil.
- Roast the Asian braised short ribs for about 3 hours.
- Remove the foil and continue roasting for an additional 15 minutes, allowing the top to develop a delicious crust.
- Prepare the potatoes by placing them on a parchment-lined baking sheet. Drizzle generously with olive oil and season with salt and pepper.
- Roast the potatoes in the oven alongside the ribs for the last 45 minutes, until golden and crispy.
- Make the potato dressing by whisking together olive oil, lime juice, sugar, minced garlic, cilantro, and red chili. Season to taste.
- When the potatoes are ready, toss them in the dressing just before serving.
- Serve the tender Asian braised short ribs alongside the zesty chili lime potatoes for a beautifully balanced plate.
Notes
- Garnish with extra cilantro for a fresh finish.
- Marinate short ribs for at least 6 hours, or preferably overnight, for fuller flavor.
- Use a meat thermometer to ensure the ribs reach 200°F for perfect tenderness.
- Keep the roasting pan tightly covered with foil until the last 15 minutes to lock in moisture and develop a crust.
- Cut Yukon Gold potatoes evenly for consistent cooking.
- Season the chili lime potato dressing to balance acidity and heat.
- Explore variations like pork ribs, vegetable medley, sweet potato swap, herb infusion, spicy kick, coconut milk, gluten-free (tamari), or smoky flavor (smoked paprika).
