  • Total Time: 2 hours 48 minutes
  • Yield: 10 buns
  • Diet: Vegetarian

Description

These Apple Cheesecake Brioche Buns offer a cozy fall indulgence. Soft brioche surrounds a creamy cheesecake filling and tender, spiced apples. They are perfect for breakfast, dessert, or a snack.

Ingredients

  • Warm Milk: 1 cup (Use whole milk for best results)
  • Active Dry Yeast: 2 teaspoons (Proof before using)
  • Granulated Sugar: 1/4 cup (Aids yeast activation)
  • Bread Flour: 4 cups (Can substitute with all-purpose flour)
  • Salt: 1 teaspoon (Enhances flavor)
  • Egg Yolks: 4 large (Adds tenderness)
  • Unsalted Butter: 1/2 cup (Softened)
  • Vanilla Extract: 1 teaspoon (Optional flavor enhancer)
  • Apples (Honeycrisp or Gala): 3 cups (Any baking apple works)
  • Cinnamon: 1 teaspoon (Adjust spices to preference)
  • Nutmeg: 1/4 teaspoon (Infuse warm flavors)
  • Allspice: 1/4 teaspoon (Infuse warm flavors)
  • Cream Cheese: 8 ounces (Use block for best texture)
  • Brown Sugar: 1/4 cup (Light or dark varieties are delicious)
  • Unsalted Butter: 1/2 cup (Cold, cut into bits)
  • Brown Sugar: 1/4 cup (Mix with granulated sugar for variation)
  • Cinnamon: 1 teaspoon (Enhances flavor)
  • Flour: 1/2 cup (Holds the topping together)

Instructions

  1. Combine warm milk, active dry yeast, and granulated sugar in a bowl. Let it sit for about 5 minutes until foamy.
  2. In a large mixing bowl, combine bread flour, salt, egg yolks, and the activated yeast mixture. Stir until it forms a shaggy dough.
  3. Turn the dough out onto a floured surface and knead for about 10 minutes until smooth and elastic. Slowly incorporate softened butter, kneading until fully incorporated.
  4. Transfer the dough to a lightly oiled bowl, cover with plastic wrap, and let it rise in a warm place for around 1 hour, or until doubled in size.
  5. In a pan, melt butter and add diced apples, brown sugar, and spices. Cook until the apples are tender, about 5-7 minutes. Remove from heat and let cool.
  6. In a bowl, blend cream cheese, sugar, and vanilla extract until creamy and smooth.
  7. In a small bowl, mix cold unsalted butter, brown sugar, flour, and cinnamon until crumbly.
  8. Divide the risen dough into 10 equal pieces. Roll each piece into a ball and place them on a lined baking sheet. Cover and let rise for another 30-45 minutes.
  9. Preheat your oven to 375°F (190°C). Make indents in the center of each bun and fill with cream cheese, then top with the apple mixture. Sprinkle with crumble topping and brush the edges with egg wash.
  10. Bake for 15-18 minutes until golden brown.
  11. Allow the buns to cool slightly on a wire rack. Dust them with powdered sugar just before serving.

Notes

  • Drizzle with caramel sauce for extra indulgence.
  • Ensure your milk is warm but not too hot, around 110°F, to effectively activate the yeast.
  • Use the windowpane test to check if your dough is kneaded enough.
  • Choose firm, tart apples like Honeycrisp or Gala.
  • Don’t rush the rising process; it’s essential for airy buns.
  • For extra crunch, add chopped nuts to your crumble topping or apple filling.
  • You can prepare the dough a day in advance and refrigerate it overnight.
  • Store buns in an airtight container at room temperature for up to 3 days.
  • Refrigerate for up to 4 days, well-wrapped.
  • Freeze for up to 3 months; thaw in the refrigerator or at room temperature.
  • Reheat in the oven at 350°F for 5-7 minutes.
