Ingredients

  • 120 g bananas, mashed (about 1 medium banana)
  • 100 g smooth peanut butter
  • 2 large eggs
  • 250 g ground almonds/almond flour
  • 2 tsp baking powder
  • 45 g xylitol (or other sweetener)
  • 1 handful crushed salted peanuts

Instructions

  1. Preheat your oven to 200°C (or 180°C for a fan oven). Line a baking tray with greaseproof paper.
  2. Mash the bananas in a large bowl until smooth and creamy.
  3. Combine the peanut butter and eggs with the mashed banana. Mix well.
  4. Stir in the almond flour, baking powder, and xylitol gradually. Mix until a soft dough forms.
  5. Scoop out a spoonful of the dough and roll it into a ball. Place it on the prepared baking sheet. Repeat until you have 12 cookie balls.
  6. Flatten each cookie ball gently to your desired thickness.
  7. Sprinkle crushed salted peanuts on top of each cookie, pressing them down lightly.
  8. Bake in your preheated oven for about 15 minutes or until light golden brown.
  9. Cool the cookies completely on the tray before transferring them to an airtight container.
