Delicious Almond Flour Banana Cookies with Peanuts Bliss

- 120 g bananas, mashed (about 1 medium banana)
- 100 g smooth peanut butter
- 2 large eggs
- 250 g ground almonds/almond flour
- 2 tsp baking powder
- 45 g xylitol (or other sweetener)
- 1 handful crushed salted peanuts
Instructions
- Preheat your oven to 200°C (or 180°C for a fan oven). Line a baking tray with greaseproof paper.
- Mash the bananas in a large bowl until smooth and creamy.
- Combine the peanut butter and eggs with the mashed banana. Mix well.
- Stir in the almond flour, baking powder, and xylitol gradually. Mix until a soft dough forms.
- Scoop out a spoonful of the dough and roll it into a ball. Place it on the prepared baking sheet. Repeat until you have 12 cookie balls.
- Flatten each cookie ball gently to your desired thickness.
- Sprinkle crushed salted peanuts on top of each cookie, pressing them down lightly.
- Bake in your preheated oven for about 15 minutes or until light golden brown.
- Cool the cookies completely on the tray before transferring them to an airtight container.
