Delicious ABC Mini Muffins to Brighten Your Snack Time


Ingredients

  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 ¾ cups all-purpose flour
  • ¾ cup very ripe mashed banana
  • ½ cup peeled grated apple
  • ⅓ cup grated carrot
  • ¼ cup butter
  • 2 teaspoons vanilla extract
  • ½ cup maple syrup

Instructions

  1. Whisk together the salt, baking powder, baking soda, and cinnamon in a mixing bowl until well combined.
  2. Mash the banana very well until no chunks remain.
  3. Combine the mashed banana, grated apple, grated carrots, melted butter, eggs, vanilla extract, and maple syrup in a separate mixing bowl, whisking until smooth.
  4. Mix the dry ingredients with the wet ingredients until just combined, being careful not to over mix the batter.
  5. Grease a mini muffin tin with olive oil cooking spray, then evenly distribute the batter using a mini cookie scoop.
  6. Bake the mini muffins in a preheated oven at 350°F for 16-18 minutes, or until a toothpick inserted comes out clean.
  7. Cool the muffins in the pan for 5 minutes before transferring them onto a wire cooling rack.

Notes

  • For a dairy-free version, substitute butter with coconut oil.
