Delicious ABC Mini Muffins to Brighten Your Snack Time

- ¼ teaspoon salt
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- 1 teaspoon cinnamon
- 1 ¾ cups all-purpose flour
- ¾ cup very ripe mashed banana
- ½ cup peeled grated apple
- ⅓ cup grated carrot
- ¼ cup butter
- 2 teaspoons vanilla extract
- ½ cup maple syrup
Instructions
- Whisk together the salt, baking powder, baking soda, and cinnamon in a mixing bowl until well combined.
- Mash the banana very well until no chunks remain.
- Combine the mashed banana, grated apple, grated carrots, melted butter, eggs, vanilla extract, and maple syrup in a separate mixing bowl, whisking until smooth.
- Mix the dry ingredients with the wet ingredients until just combined, being careful not to over mix the batter.
- Grease a mini muffin tin with olive oil cooking spray, then evenly distribute the batter using a mini cookie scoop.
- Bake the mini muffins in a preheated oven at 350°F for 16-18 minutes, or until a toothpick inserted comes out clean.
- Cool the muffins in the pan for 5 minutes before transferring them onto a wire cooling rack.

- For a dairy-free version, substitute butter with coconut oil.
