Description
Learn how to make simple and healthy 4 ingredient date caramels. These no-bake treats are naturally sweet, vegan, and dairy-free, offering a delicious alternative to traditional caramel.
Ingredients
- 1 pound Medjool dates, pitted
- 1/4 cup creamy almond butter
- 2 tablespoons coconut oil, melted
- 1/2 cup chocolate chips or bar, for dipping
- 1 teaspoon coconut oil, for melting chocolate
- Flaky sea salt, for topping (optional)
Instructions
- Soak the pitted Medjool dates in hot water for 10 minutes to soften them.
- Drain the softened dates and place them in a food processor.
- Add the almond butter and 2 tablespoons of melted coconut oil to the food processor.
- Blend the ingredients until the mixture is smooth and creamy, forming a date caramel base.
- Line a loaf pan with parchment paper. Spread the date caramel mixture evenly into the pan.
- Freeze the mixture for 2 to 3 hours, or until firm.
- Remove the firm date caramel from the freezer and cut it into 12 small squares.
- Melt the chocolate chips with 1 teaspoon of coconut oil using a double boiler or microwave in short intervals, stirring between each.
- Dip each date caramel square into the melted chocolate, ensuring it is fully coated.
- Place the chocolate-covered caramels on a parchment-lined plate.
- Sprinkle with flaky sea salt, if desired.
- Refrigerate the caramels until the chocolate has set.
Notes
- For a nut-free version, substitute sunflower seed butter for almond butter.
- Use refined coconut oil to avoid any coconut flavor in the caramels.
- If your dates are dry, the soaking step is crucial for a smooth blend.
- When melting chocolate, use low heat to prevent burning.
- Store the finished date caramels in the refrigerator or freezer.
